Bitters are the salt and pepper of the cocktail world. They add that final touch of flavor to a cocktail that creates the perfect balance. Every one uses the staples like Angostura, Peychaud's and Orange, but it is not that hard to make your own with a high proof neutral spirit, a blend of herbs, spices, bittering agents, and some other flavors.
Here is my first attempts at barrel aging my own whiskey. Aging your own whiskey is so cool, but in almost everything I have read, starting with the white dog whiskey just makes oaky white dog whiskey that's now brown. Now don't take me wrong, I think it's awesome I got to make my own whiskey, but while it's awesome, it's really kinda crap whiskey.
